மிளகாய் — Tamil Nadu's Spice Gold

மிளகாய் இல்லாமல் தமிழ் சமையல் இல்லை. Chilli is in every curry, every chutney, every pickle — demand never really goes away, and dry chilli stores for months, which gives you real control over when to sell.

Erode, Salem, and Ramanathapuram grow chilli with strong pungency and bright colour that fetch premium prices, both locally and for export. The real skill in this crop isn't growing it — it's knowing when to sell green, when to dry, and when to hold your stock.

Cultivation — Step by Step

  1. Soil prep

    Deep plough, 5–8T FYM/acre, 50kg SSP basal, raised beds — chilli can die within 24 hours of standing water.

  2. Nursery (30–35 days)

    Treat seeds with Thiram before sowing. Harden seedlings by reducing water 5 days before transplanting to cut shock.

  3. Transplanting

    60cm × 45cm spacing, evening transplant, bamboo stakes at planting, Carbofuran in the hole against termites and nematodes.

  4. Watering

    Daily for the first week, then every 4–5 days. Drip preferred. Never let soil dry during flowering — blossom drop can cost 30–40% yield.

  5. Fertiliser

    Basal SSP + MOP + FYM, staged urea/MOP through fruiting, boron and zinc spray at fruit set. Never skip potash — it drives colour and pungency.

  6. Drying

    Harvest only fully red fruit, spread in full sun, turn twice daily, 10–14 days. This step alone is the biggest profit multiplier in chilli farming.

  7. Storage & selling

    Store dry in ventilated gunny bags, raised off the floor. Sell half at harvest, hold the rest for 2–3 months when prices typically climb.

At ₹100/kg, gross revenue runs ₹3,00,000–4,00,000, leaving a net profit of roughly ₹1,00,000–2,00,000 per acre. When prices spike — which happens most seasons — profit can push past ₹3,00,000. The trick is holding stock instead of selling everything at harvest.

Incomplete drying causes mould and a steep price penalty. Properly dried chilli should snap, not bend.
